Janice Dig Cabaysa was a proud, first generation, Filipino-American. Born and raised on the West Side of Long Beach surrounded by her brother (Jerico), parents (Manny & Cecilia), legendary grandparents, too many cousins to count, aunts, uncles, and a whole lot of laughter. Spam and eggs with garlic fried rice was a staple meal, and vienna sausage sandwiches filled her early summers. She loved Mariah Carey, 90s hip-hop and R&B (of course), was inspired by Nanay Bebang (her grandmother) to become a chef, and loved to LOVE everyone around her. She hated ice cubes, will always be Daddy's little girl, and for the most part, lost things on the reg (cue keys, wallet, or every St. Lucy's jacket her mom ever bought her). She was a true force whose loud cackle would bring a smile to anyone's face. Janice loved her nieces, Sloane and Penelope, and wore the title Tita Janice with pride. She loved them fiercely as well as all of her friend's children as her own. Janice was a fighter from day one and was the greatest example of the saying - "It does not matter how many times you get knocked down, but how many times you get up." Her impact on the lives around her is far reaching and there will never be another J-Nice. In true Janice fashion, she left this earthly world doing what she LOVED most, cooking for everyone. She will be FOREVER LOVED, FOREVER MISSED.
